24-year-old chef Jay Astafa prepared an array of plant-based dishes for the famed musician over the course of three days.
Famed musician Lenny Kravitz hired 24-year-old vegan chef Jay Astafa to cater his visit to New York City. During the three-day gig last weekend, Astafa and sous chef Rose Edelman created an array of all-raw vegan dishes, including a six-course dinner menu that featured mushroom mango ceviche, sorrel carrot soup, a market green salad, broccoli rabe and portobello zucchini lasagna, a housemade cheese plate, and raspberry chocolate cake with coconut ice cream for dessert. The ambitious young chef opened Long Island’s first vegan restaurant 3 Brothers Vegan Café in 2015, founded vegan catering company Jay Astafa Catering, and won the title of Vegan Iron Chef last year. Most recently, Astafa was a featured chef—along with Chloe Coscarelli, Cinnamon Snail’s Adam Sobel, and Daphne Cheng—at an all-vegan dinner hosted at the historic James Beard House. Lenny Kravitz—who previously wavered between vegetarianism and eating meat—will perform a tribute to late musician Prince during the 2017 Rock and Roll Hall of Fame Inductees ceremony in Brooklyn tonight.
